For this example, I will show you how to set the default program to open PDFs.  These same steps can be followed for any file type.

1) Search for Default Apps.

2) Since the PDF viewer is not on of the top 6 choices on this screen, we need to scroll down and select "Choose default apps by file type"

3) Scroll down to find the file extension (.pdf), then click on the name of the current default app to see a list of available apps.  Choose your favorite!
